Jerk style Chicken wings

I call these succulent chicken wings jerk style as this is not a traditional jerk recipe.  Jerk in its essence is a cooking method, and the history of jerk tells an important story that is central to Jamaican culture and the resistance of its people against slavery.  It’s certainly not possible to jerk in an air fryer, traditionally jerk is cooked slowly over pimento wood and is often covered with zinc which helps create its smokey flavour.

I recommend seasoning the chicken and popping it in the fridge overnight to marinade, this helps to intensify the flavour as for this recipe we will be using an air fryer to cook the chicken. 


Ingredients: 

1kilo of Chicken wings

1 tsp ground all spice/pimento berries

1 scotch bonnet, finely chopped (optional)

4 sprigs of fresh thyme

1 tbsp garlic powder

2 tbsp Chicken seasoning 

1tbsp smoked paprika

2tbsp Jerk Seasoning


Method: 

1. In a large bowl, combine chicken wings, with all of the seasoning and mix well, pop in the fridge to marinade ideally overnight, but if you’re short of time a minimum of an hour will do. 

2. Pop the marinated wings in the air fryer basket in a single layer. A single layer will ensure the wings are evenly cooked. Depending on the size of your air fryer you may have to cook batches of 6-8 wings at a time. 

3. Set the air fryer temperature to 160 degrees and set the timer to 20 minutes.

4. After 10 minutes, pull the basket out and give it a bit of a shake, if any of the wings are stuck use some tongs to carefully flip the wings.

5. After the timer has gone off, check that your chicken is cooked through, the wings should be golden brown and crispy and the juices of the chicken should run clear. You can also use a meat thermometer to check the internal temperature of the chicken, it should be 75 degrees. Remove the wings from the air fryer basket and serve.

If you don’t have an air fryer you can make these wings in the oven, pop them in for about 20-25mins at 160 degrees.
