Corned Beef and Aloo (potato)

A staple in most Caribbean households, for me this dish brings back nostalgic memories of when my mum needed to cook something quick and satisfying after a long day’s work.  This dish is ready in 20 mins flat. This dish is a crowd pleaser every, time, typically served with white rice, but I love mine with either fried bakes or roti. 

Each household will have its own version of making this wholesome dish, here’s mine.


Ingredients: 

1 tin of corned beef

1 medium potato, thinly sliced or diced

1 small onion or shallot, diced

2 sprigs of thyme

1 clove of garlic, crushed

1 wiri wiri pepper (or scotch bonnet)

2 spring onions, sliced

Oil for frying

Salt to taste. 


Method: 

1. In a pan heat about 2 tbsp of neutral oil and fry your onions until they are translucent (3 mins). Add in the garlic, thyme, wiri wiri and potatoes, and fry for a further 5- 10 mins, or until your potatoes are cooked.  

2. Add in the corned beef, break it into large chunks with a spoon, and allow it to melt into the potatoes.  Turn gently, being careful to not break it into too small pieces. Fry for no more than 5 mins, then take off the heat, garnish with sliced spring onions, and serve.
